Cook III - Seven Restaurant (Overnight)

About the role

The Ritz-Carlton Grand Cayman is hiring a Cook III for its Seven Restaurant, covering evening and overnight shifts. The hotel partners with Rouxbe Cooking School to offer online culinary training for its associates. The ideal candidate plans, preps, sets up and serves food for breakfast, lunch and dinner menu items and specials in line with hotel standards and plating guides.

Key responsibilities

• Plan, prep, set up and serve food for breakfast, lunch and dinner menus and specials
• Operate ovens, stoves, grills, microwaves and fryers, and test foods for sufficient cooking
• Monitor food quality and check appliance and food temperatures
• Set up and break down work stations and serve food in proper portions
• Wash and disinfect the kitchen, tables, tools, knives and equipment
• Prepare ingredients, including portioning, chopping, washing and peeling produce, and prepare cold foods
• Follow company safety and security policies, report hazards and accidents, and complete safety training

Required profile

• Culinary degree preferred; previous luxury/fine dining experience is an advantage
• Minimum 3 years of experience as a cook in luxury culinary operations
• Knowledge of Italian, pizza, fusion, Caribbean and Asian cuisine
• Knowledge of FIFO and sanitation / HACCP is a must
• English reading, writing and speaking ability; adaptability to a multicultural environment
• Flexibility with hours and rotating shifts; able to stand, sit or walk for long periods and lift up to 35 pounds
